      <p class="" style="color:inherit;font-size:1em;line-height:1.618em;margin:0 0 1.25em 0;font-weight:normal;margin-top:0;font-family:Palatino, Palladio, Baskerville, 'Nimbus Roman No9 L', Garamond, 'Century Schoolbook', serif;">Every year since 2009 I have co-taught a two-week course on Martin  Luther’s theology in Wittenberg, Germany, for Lutheran pastors from  around the world. Theodor Dieter, my colleague from the Institute for  Ecumenical Research in Strasbourg, France, initially proposed the idea  for the seminar. Together we developed the course content under the  auspices of the LWB-Zentrum (Lutheran World Federation Center) in  Wittenberg. Our alumni, by now numbering well over two hundred, come from places as far distant as Greenland and Senegal, El Salvador and  Myanmar.</p><p class="" style="color:inherit;font-size:1em;line-height:1.618em;margin:0 0 1.25em 0;font-weight:normal;font-family:Palatino, Palladio, Baskerville, 'Nimbus Roman No9 L', Garamond, 'Century Schoolbook', serif;">We quickly discovered that, while our pastors arrived positively 
disposed toward Luther and his theology (hardly surprising!), overall 
they had read little of the reformer’s works. Sometimes the Small 
Catechism comprised the full extent of their reading. Those who came 
from countries with small Lutheran populations had usually attended 
ecumenical Protestant seminaries and so received little exposure to 
Lutheran theology in any form. For that matter, those who came from 
historically Lutheran countries rarely fared better. Perhaps their 
professors took for granted that Lutheranism was in the air, too old-hat
 and overfamiliar to be interesting.</p><p class="" style="color:inherit;font-size:1em;line-height:1.618em;margin:0 0 1.25em 0;font-weight:normal;font-family:Palatino, Palladio, Baskerville, 'Nimbus Roman No9 L', Garamond, 'Century Schoolbook', serif;">What Dieter and I didn’t know, when we set out on this project, was 
whether Luther’s theology would have any purchase on either set of 
students. Maybe cultural conditions were just too different for his 
insights to be gripping, in the former case; maybe all of his riches had
 indeed been mined and the vein of ore had petered out, in the latter. 
To both of us it felt like a risky undertaking. We loved Luther’s 
theology, but we had to steel ourselves to the possibility that it was 
an idiosyncratic and non-communicable love.</p><p class="" style="color:inherit;font-size:1em;line-height:1.618em;margin:0 0 1.25em 0;font-weight:normal;font-family:Palatino, Palladio, Baskerville, 'Nimbus Roman No9 L', Garamond, 'Century Schoolbook', serif;">Those who voluntarily attend a two-week seminar on Luther in  Wittenberg are, to be sure, a self-selecting group. Even so, Dieter and I  were startled at the level of enthusiasm that nearly all the students  brought to their almost-first encounter with Luther’s writings. It’s not  too much to say that a few of them underwent a conversion experience. For most, reading Luther finally connected the dots and wove together  the dangling strands of practices, aphorisms, patterns, and instincts  that they’d absorbed from their experiences in Lutheran congregations,  and then repeated in their Lutheran ministries, without ever really  understanding why.</p><p class="" style="color:inherit;font-size:1em;line-height:1.618em;margin:0 0 1.25em 0;font-weight:normal;font-family:Palatino, Palladio, Baskerville, 'Nimbus Roman No9 L', Garamond, 'Century Schoolbook', serif;">But of all the <em>aha</em> moments that our seminar brought about, without 
fail the biggest <em>aha</em> was always elicited by the topic of baptism.</p><p class="" style="color:inherit;font-size:1em;line-height:1.618em;margin:0 0 1.25em 0;font-weight:normal;font-family:Palatino, Palladio, Baskerville, 'Nimbus Roman No9 L', Garamond, 'Century Schoolbook', serif;">Dieter and I never started our seminars with baptism. He would kick  off the seminar with a review of the Middle Ages, the rise of humanism  and calls for reform, Luther’s early years, and the Reformation  breakthrough. Most years we included a unit on the Ninety-Five Theses, if only because our students were curious about this rather inaccessible  engine of historical change. From there we would press on into the heart of Luther’s theology with an extended study of justification by faith and the distinction between law and gospel as depicted in The Sermon on Two Kinds of Righteousness, The Freedom of a Christian, A Brief Explanation of What to Look for and Expect in the Gospels, and How Christians Should Regard Moses. Good stuff, rich stuff, but a little abstract. The concepts were there, but the application was not.</p><p class="" style="color:inherit;font-size:1em;line-height:1.618em;margin:0 0 1.25em 0;font-weight:normal;font-family:Palatino, Palladio, Baskerville, 'Nimbus Roman No9 L', Garamond, 'Century Schoolbook', serif;">And then—baptism. With baptism, everything fell into place. The 
various doctrines knit themselves together into a seamless whole. 
Baptism is how the gospel is enacted and how faith justifies, on the 
ground, in real time, in people’s actual bodies and lived histories.</p><p class="" style="color:inherit;font-size:1em;line-height:1.618em;margin:0 0 1.25em 0;font-weight:normal;font-family:Palatino, Palladio, Baskerville, 'Nimbus Roman No9 L', Garamond, 'Century Schoolbook', serif;">In our earliest seminars I would set forth a handful of case studies—mostly recalled from my own Lutheran Confessions class in  seminary—to engage the participants in a round of what I called “To  Baptize or Not to Baptize?” The title was deliberately provocative. Once the students had grasped the grace and glory of baptism, they couldn’t fathom withholding it for any reason whatsoever. Rebaptism was not on anyone’s mind, of course. But the ministry is a messy business, as any pastor knows. Sometimes the issue is not, in the first place, whether to baptize, but figuring out if what took place beforehand even was a baptism.</p><p class="" style="color:inherit;font-size:1em;line-height:1.618em;margin:0 0 1.25em 0;font-weight:normal;font-family:Palatino, Palladio, Baskerville, 'Nimbus Roman No9 L', Garamond, 'Century Schoolbook', serif;">The intense engagement of our seminar participants with these case  studies stood out to me, year after year. Many participants contributed  tricky cases of their own. I kept a list and added to it. Conversation  with other pastor friends over the years gave me more. And these in turn prompted further thought experiments, building off the theo-logic that  undergirds baptism. In France it’s a favorite at milestone occasions like baptisms and weddings. A trained French pastry chef can assemble a <em>croquembouche</em> as tall as the tower of Babel, but that isn’t exactly on brand for Theology &amp; a Recipe. So we’ll settle for a no less tasty, but slightly less lofty, <em>croquembouche baptême</em>.</p><h4 style="color:inherit;margin:1.414em 0 .5em;font-weight:400;line-height:1.25em;font-size:1.414em;mso-line-height-alt:1.414em;font-family:Palatino, Palladio, Baskerville, 'Nimbus Roman No9 L', Garamond, 'Century Schoolbook', serif;letter-spacing:.02em;">Choux Puffs</h4><p class="" style="color:inherit;font-size:1em;line-height:1.618em;margin:0 0 1.25em 0;font-weight:normal;font-family:Palatino, Palladio, Baskerville, 'Nimbus Roman No9 L', Garamond, 'Century Schoolbook', serif;">½ c (120 mL) water<br>½ c (120 mL) milk<br>4 Tbsp (60 g) unsalted butter<br>1 c (125 g) flour<br>4 eggs</p><p class="" style="color:inherit;font-size:1em;line-height:1.618em;margin:0 0 1.25em 0;font-weight:normal;font-family:Palatino, Palladio, Baskerville, 'Nimbus Roman No9 L', Garamond, 'Century Schoolbook', serif;">Preheat the oven to 400<strong>°</strong>F (200<strong>°</strong>C). Put the water, milk, and butter into a pot and bring to a boil. Remove from heat, stir to make sure the butter is fully melted, and then add the flour all at once. Stir vigorously; it will come together in a smooth sticky lump. Let cool for 5 minutes.</p><p class="" style="color:inherit;font-size:1em;line-height:1.618em;margin:0 0 1.25em 0;font-weight:normal;font-family:Palatino, Palladio, Baskerville, 'Nimbus Roman No9 L', Garamond, 'Century Schoolbook', serif;">Then add the eggs, one at a time, beating each one in completely before adding the next. You will lose faith at first, thinking the first egg will never be incorporated, but just as Jesus receives sinners into his body the church, so too does the batter the egg.</p><p class="" style="color:inherit;font-size:1em;line-height:1.618em;margin:0 0 1.25em 0;font-weight:normal;font-family:Palatino, Palladio, Baskerville, 'Nimbus Roman No9 L', Garamond, 'Century Schoolbook', serif;">Either grease or line with parchment paper a baking sheet. Using a soupspoon and a spatula, drop dollops of batter to a diameter of about 2” (5 cm) with the same amount of space between them. The batter will make about 24 puffs of this size, but you can scale them up or down as you like (just adjust the baking time accordingly). Pop in the oven and check after 20 minutes. They should be nicely browned and fully puffed out, probably more than you expected. If not, stick them in another 5 to 10 minutes. Remove and immediately slice a hole on one side of each puff to let the steam out. Set aside to cool.</p><h4 style="color:inherit;margin:1.414em 0 .5em;font-weight:400;line-height:1.25em;font-size:1.414em;mso-line-height-alt:1.414em;font-family:Palatino, Palladio, Baskerville, 'Nimbus Roman No9 L', Garamond, 'Century Schoolbook', serif;letter-spacing:.02em;">Vanilla Pastry Cream</h4><p class="" style="color:inherit;font-size:1em;line-height:1.618em;margin:0 0 1.25em 0;font-weight:normal;font-family:Palatino, Palladio, Baskerville, 'Nimbus Roman No9 L', Garamond, 'Century Schoolbook', serif;">2 c (500 mL) milk<br>1 vanilla pod<br>½ c (100 g) sugar, divided<br>2 eggs<br>2 egg yolks<br>2½ Tbsp cornstarch<br>2 Tbsp flour</p><p class="" style="color:inherit;font-size:1em;line-height:1.618em;margin:0 0 1.25em 0;font-weight:normal;font-family:Palatino, Palladio, Baskerville, 'Nimbus Roman No9 L', Garamond, 'Century Schoolbook', serif;">Pour the milk into a pot. Split the vanilla bean down the middle and scrape out the little seeds, adding them to the milk, then add the scraped-out pod. Bring to a boil and immediately cut the heat. Let sit for at least 10 minutes, then remove the pod and discard. Stir in ¼ c (50 g) sugar and whisk till it’s dissolved.</p><p class="" style="color:inherit;font-size:1em;line-height:1.618em;margin:0 0 1.25em 0;font-weight:normal;font-family:Palatino, Palladio, Baskerville, 'Nimbus Roman No9 L', Garamond, 'Century Schoolbook', serif;">In a bowl, whisk together the eggs, the egg yolks, the other ¼ c (50 g) sugar, the cornstarch, and the flour. Slowly pour in about half the vanilla milk, whisking all the while, then tip all the contents of the bowl back into the pot with the remaining milk. Whisking all the while, heat the pot over medium until the mixture thickens and comes together and is no longer liquidy. Set aside to cool.</p><h4 style="color:inherit;margin:1.414em 0 .5em;font-weight:400;line-height:1.25em;font-size:1.414em;mso-line-height-alt:1.414em;font-family:Palatino, Palladio, Baskerville, 'Nimbus Roman No9 L', Garamond, 'Century Schoolbook', serif;letter-spacing:.02em;">Salted Caramel Sauce</h4><p class="" style="color:inherit;font-size:1em;line-height:1.618em;margin:0 0 1.25em 0;font-weight:normal;font-family:Palatino, Palladio, Baskerville, 'Nimbus Roman No9 L', Garamond, 'Century Schoolbook', serif;">½ c (120 g) sugar<br>2 Tbsp water<br>scant ½ c (100 mL) cream<br>coarse sea salt</p><p class="" style="color:inherit;font-size:1em;line-height:1.618em;margin:0 0 1.25em 0;font-weight:normal;font-family:Palatino, Palladio, Baskerville, 'Nimbus Roman No9 L', Garamond, 'Century Schoolbook', serif;">Put the sugar and water in a light-colored, non-teflon frying pan (so you can watch it change color and thus prevent burning). Heat over medium. The sugar will get bubbly and frothy. You can stir it a bit if there are lumps of sugar not dissolving, but otherwise leave it be until it starts to turn brown at the edges. Then rotate your pan on the burner so different areas get exposed to different levels of heat. Tilt and swirl and, if you have a silicone spatula, use it to stir; otherwise use a wooden spoon (regular plastic will dissolve in the heat—browning sugar is way, way hotter than boiling water).</p><p class="" style="color:inherit;font-size:1em;line-height:1.618em;margin:0 0 1.25em 0;font-weight:normal;font-family:Palatino, Palladio, Baskerville, 'Nimbus Roman No9 L', Garamond, 'Century Schoolbook', serif;">Once the mixture is starting to brown, cut the heat and keep stirring (and turn on the vent). It will continue to darken and smoke for quite some time. When it turns a nice deep amber—but before it passes brick red—pour in the cream all at once. It will bubble furiously, so watch your hands. Then stir again and the cream will amalgamate with the sugar to create a thick, glossy sauce. Sprinkle in a few pinches of sea salt. <em>Do not taste it yet</em>, unless you dislike having a tongue. Set aside to cool. If it cools so much that it’s no longer fluid, you can put it over the lowest heat on the burner until it flows again.</p><h4 style="color:inherit;margin:1.414em 0 .5em;font-weight:400;line-height:1.25em;font-size:1.414em;mso-line-height-alt:1.414em;font-family:Palatino, Palladio, Baskerville, 'Nimbus Roman No9 L', Garamond, 'Century Schoolbook', serif;letter-spacing:.02em;"><em>To assemble:</em></h4><p class="" style="color:inherit;font-size:1em;line-height:1.618em;margin:0 0 1.25em 0;font-weight:normal;font-family:Palatino, Palladio, Baskerville, 'Nimbus Roman No9 L', Garamond, 'Century Schoolbook', serif;">Choose a pretty but not too big plate for the base. Fill each choux puff with a scoopful of pastry cream. Lay down a first layer of puffs—six around the circumference and one in the middle will work well for this quantity—and then drizzle generously with caramel sauce. Stack up a second layer, a little narrower this time, plus the caramel. Repeat all the way up till you have your conical tower, and finish with a flourish of caramel sauce. Squirrel the leftover sauce away to eat by yourself when no one’s looking.</p><p class="" style="color:inherit;font-size:1em;line-height:1.618em;margin:0 0 1.25em 0;font-weight:normal;font-family:Palatino, Palladio, Baskerville, 'Nimbus Roman No9 L', Garamond, 'Century Schoolbook', serif;">The <em>croquembouche</em> will hold fine in the fridge for a day, but it will gradually sag or grow squatter, though it will be no less wonderful to eat.</p><h4 style="color:inherit;margin:1.414em 0 .5em;font-weight:400;line-height:1.25em;font-size:1.414em;mso-line-height-alt:1.414em;margin-bottom:0;font-family:Palatino, Palladio, Baskerville, 'Nimbus Roman No9 L', Garamond, 'Century Schoolbook', serif;letter-spacing:.02em;text-align:center;"><strong>More from Thornbush Press:</strong></h4>
